This Week’s Menu
I don’t assign a dinner for each day. I make a list of dinners and let the children pick what they would like for that day.
- Oven-baked Chicken, Baked Potatoes, Green Beans
- Pizza, Salad
- Chicken Casserole, Salad, Dinner Rolls
- Kielbasa Sausage, Mac and Cheese, Green Beans
- Diet Coke Chicken, Pierogies, Asparagus
- Cream Cheese Chicken, Rice, Mixed Veggies
- Spaghetti and Meatballs, Salad, Texas Toast
- Taco Bake, Corn, Cornbread
- Shepherd Pie, Texas Toast
- 2-Step chicken, Rice, Broccoli
- Fish, Brown Rice, Mixed Veggies
Here is the recipe for Cream Cheese Chicken: (Just three ingredients)
- Chicken Tenders
- Chicken Broth (14 oz can)
- Cream Cheese (2 to 3 Tbsp)
Sear the chicken with Pam in a skillet. Remove chicken from pan. Add chicken broth and reduce broth to about half. Reduce heat to a simmer. Add cream cheese. Mix well. Return the chicken to the pan. Simmer until sauce is thicken. I found this recipe in the Kraft Magazine but I changed it a little for my family. Enjoy!!
