This Week’s Menu

I don’t assign a dinner for each day. I make a list of dinners and let the children pick what they would like for that day.

  • Oven-baked Chicken, Baked Potatoes, Green Beans
  • Pizza, Salad
  • Chicken Casserole, Salad, Dinner Rolls
  • Kielbasa Sausage, Mac and Cheese, Green Beans
  • Diet Coke Chicken, Pierogies, Asparagus
  • Cream Cheese Chicken, Rice, Mixed Veggies
  • Spaghetti and Meatballs, Salad, Texas Toast
  • Taco Bake, Corn, Cornbread
  • Shepherd Pie, Texas Toast
  • 2-Step chicken, Rice, Broccoli
  • Fish, Brown Rice, Mixed Veggies

Here is the recipe for Cream Cheese Chicken: (Just three ingredients)

  • Chicken Tenders
  • Chicken Broth (14 oz can)
  • Cream Cheese (2 to 3 Tbsp)

Sear the chicken with Pam in a skillet. Remove chicken from pan. Add chicken broth and reduce broth to about half. Reduce heat to a simmer. Add cream cheese. Mix well. Return the chicken to the pan. Simmer until sauce is thicken. I found this recipe in the Kraft Magazine but I changed it a little for my family. Enjoy!!
