Menu Plan


Last week, we didn’t follow the menu completely due to the fact my sweet hubby took us out to eat twice. I am complaining and for matter of fact I was very thankful. We all had a great time. Don’t forget to scroll down for some recipes. Here is the menu for this week…

Breakfast–Egg Custard Cups
Lunch–Tuna Melts with Veggies
Dinner–Meat Lasagna with Garlic Toast, Steamed veggies

Wednesday
Breakfast–Blueberry Pancakes
Lunch–Mac and Cheese with veggie
Dinner–Cube Steak Dinner
Dessert–Apple Turnovers

Thursday
Breakfast–Eggs and Hash Browns
Lunch–Mini Bagels with Potato soup
Dinner–Herb & Cheese Chicken Tenders, Green Beans
Dessert–Lemon Coconut Angel Food cake

Friday
Breakfast–Berry & Cream Roll ups

Breakfast–Frozen waffles/Cereal
Lunch–BBQ Beef Sandwiches
Dinner–Pizza
Dessert–Lemon Bars

Recipe for Tuna Melts:
1 6 oz. can of tuna, drained
1/2 cup of mayonnaise or Miracle Whip (you can use less or more if you want)
1/2 cup of grated cheese (I like using Cracker Barrel 2% sharp cheddar)
1/4 cup chopped celery
1 big squeeze of yellow mustard
6 pieces of bread
butter or margarine

Mix all the ingredients except for the butter and bread in a bowl. Butter the bread on one side. Place butter side bread in a skillet over medium heat. Top with the tuna mixture. Top with another piece of bread with butter side up. Toast the bread for about 2 minutes or until golden brown. Flip and brown the other side. Makes three sandwiches.

Recipe for Apple Turnovers:
3 to 4 apples (any kind of apples will work, this is a great way to use up apples)
1 tablespoon cinnamon
1/2 cup of sugar
1 egg beaten with 1 tablespoon of water
Pillsbury Just Roll Pie Crust
Sugar in the Raw (optional)

Preheat oven to 450 degrees. Mix cinnamon and sugar in a bowl and set aside. Peel, core, and chop apples. Mix apple with the cinnamon and sugar. On a greased cookie sheet with edges, roll out pie crust. Place equal amounts of apple mixture in each corner leaving a small edge. Place the other pie crust on top. Cut the pie crust into four section. Seal edges with a fork. Cut a small slit in the top of the crust to vent. Brush egg wash on top. Sprinkle with Sugar in the Raw. Bake for 10-12 minutes until golden brown. Makes 4 turnovers.

    Wow, got an extra seat for me? I am so there for breakfast! I manage to do more extensive breakfast menus on the weekend, as waffles on Sunday. As for planning the whole week on dinners, I have to get more organized on that. Tonight is going to be Chicken Tikka Masala….mmmmmIndian food is one of my favorites!
