Day 19 Eating Healthier

Today was a nice and quiet day. It was nice to just relax at home. For breakfast was a delicious veggie quesadilla. It had zucchini, spinach, mushrooms, green onions, hummus, and daiya cheese.

After such a big breakfast, I was not even hungry for lunch. I just had a snack of organic whole cashews.

Dinner was wonderful. I have been wanting spaghetti for a while and we had it tonight. I cooked up a veggie burger. Then I chopped it up and mix it with some organic spaghetti sauce. Then I placed it on a bed of whole wheat pasta, topped off with some daiya cheese. I also had a spinach salad with saute veggies (zucchini, mushrooms and green onions). There was no need for dressing on this salad.

Today, I ended the day with a special treat. I had almond ice cream with some fruits.
