Day 25 Eating Healthier

Today started earlier than usual. I was up by 7am and out of the house by 8am. My hubby had an doctor’s appointment at 9am. I had to grab something quick. I grab some apple cinnamon rice cakes for breakfast.
For lunch, I was really hungry. I had grilled daiya cheese sandwich with pickles and pita chips with salsa.
For dinner, my hubby asked me to make pasta salad. The pasta salad had whole wheat pasta with olives, cucumbers, oil, red wine vinegar, and a herb and garlic seasoning.
I ended my day with a vegan cookie and handful of cashews.
Five more days until I reach my goal of eating vegan for a month.
