A Day of Rest

Today was a wonderful day. We went to church this morning and this afternoon we all just relax. It was nice not worrying about school for one day. I also can’t believe I almost have met my goal of exercising for a month. I plan on continuing exercising. I have exercised 6 days a week except for one week. I am still a little sore from yesterday run. It was nice resting today.

For breakfast, I had a veggie burger quesadilla. It had crumble up veggie burger with daiya cheese and ketchup on a whole wheat tortilla. The veggie burger is made out of black beans and lentils. I can’t eat soy proteins. It upset my stomach.

You might not have notice but we recently got new dishes.

For lunch, I had Amy’s Chili, daiya cheese, lettuce, and salsa on top of blue corn tortilla chips. My sweet hubby took the picture before I could put on the toppings. He has been very supportive and encouraging.

I also had a snack today. My hubby and I shared it. We had an apple, chocolate chip cookie and almond milk. I found these vegan chocolate chip cookie at Whole Foods. Super soft and yummy.

For dinner, I made a huge plate of vegan nachos. It had blue corn tortilla chips, daiya cheese, vegetarian refried beans, salsa, lettuce, olives, and red onions. This was shared between my hubby, son and myself. I barely could eat any of it. It nice having two strong men to share it with.  I ate way too much food today. Good thing, I am exercising.
